Cavatappi Mac and Cheese – Best of Easy Recipes
For a quick meal, I am always looking for easy recipes. It can’t get much easier and more pleasing to everyone than Cavatappi Mac and Cheese with those huge spiral corkscrews. Serving it alone as a main dish or as a side dish with another entree, I can usually please anyone in the household. Kids love it and husbands like that grab-and-go ease. This one travels away from the table a lot of the time. Watching Netflix or binge watching all my recorded shows, it works for me.
No, not that Blue Box. Get some cavatappi. That corkscrew or helix-shaped pasta is the best for holding on to any sauce. We like cheese. Yum!

Ingredients
- 1 lb bag or box of cavatappi macaroni pasta
- 8-16 oz total cheese ( cheddar, colby, Parmesan or Velveeta)
- 2 cans evaporated milk (12oz size)
- 1/2 cup chopped green scallions,or golden sweet onion, or red onion
- 1 tbsp black pepper (more or less to taste)
Instructions
- Cook pasta as directed on box. It will hold the sauce better if not cooked the full time since it will finish as cheese & milk cooks into sauce.
- Drain pasta and pour in both milks and cubed cheeses.
- Add black pepper and onions
- Stir gently til all blended and cheese has melted.
- Serve and enjoy.
Cavatappi means corkscrew. It looks like elbow macaroni with an un-ending elbow. It spirals around like the helix. Remember when you studied DNA in school? The DNA was a recipe for a human and this cavatappi mac and cheese is the recipe for great comfort food.
There are many variations and names for this type of macaroni pasta. Besides cavatappi, it is called cellentani and sometimes has ridges down the side. But it is great for a casserole and holds that texture for great leftovers. But it is best fresh from the pot. Everyone grab a bowl and head to the family room. It’s time for Movie Night!
I cook the whole package at a time because I know we will finish it off and/or have leftovers for another meal. It has variations for which onion to use. My daughter likes chopped scallions and lots of pepper. I like the golden sweet onions best but I can be persuaded to dress it up with a red onion too. Most cheeses will work included colby or cheddar. If you like, choose a blend of them all including Parmesan – whatever suits your taste. Use Velveeta if that’s your choice. It melts nicely and I use it a lot.

Make some for dinner tonight and it will be comforting! Like a warm hug from Mom or Dad. It is said our comfort foods remind us of being a child and the comforts of home and family. May we all enjoy it with our families and make memories.
