Need an easy recipe for chicken tonight?

This Sweet & Spicy Hot Chicken Fillets dinner will be great for the whole family!  Moist chicken with a bit of browned crusty spice rub on top!  And the spices I have listed are the ones we prefer. You can adjust to suit your family’s taste.

It is easy . But the sweet and hot spicy twist makes all the difference.

Maybe the cauliflower salad would work well with this chicken on a warm afternoon.

I almost always use the breast of chicken, but you can use boneless thighs or whatever cut you like, just reduce the cooking time if you are using a smaller piece of chicken. If you press on the chicken and still see red or pink juices running, it needs to cook a while longer.

My daughter’s husband made this for her for dinner once when they were dating. She loved it then and still loves it now. So does their little boy, my grandson. Jenny likes it when her son has protein for his meals since that is important for growing bones and muscle.  This is a fairly low fat recipe, and if you are eating Low Carb, it is great using the Truvia Brown Sugar Blend!

I have a  Oven Safe Fry Pan that I use. The rim around the sides is low and it is so nice for checking on the fillets as they fry. This recipe does create a bit of sauce and you may find it easy to tilt this type of skillet to baste the meat.

Note: If your cuts of chicken are especially large or thick, you might find it necessary to put the skillet in the oven and bake the fillets at 350° for 5 minutes or so. The nice thing about this skillet is that you can pop it into the oven if necessary. Saves getting another baking dish dirty!

My son loves the sauce from the chicken poured over mashed potatoes. Loves the spicy hot sauce!

Sweet & Spicy Hot Chicken Fillets

Cook Time: 20 minutes
Total Time: 30 minutes

A simple chicken dish seared in a skillet . Quick and Easy!

Ingredients

  • 4 boneless chicken breast fillets approx 6oz each ( or thighs)
  • 2 Tbsp EVOO
  • Spice mix: Add any combo you like:
  • 1/2 tsp garlic powder or 1 crushed garlic clove
  • 1/2 tsp cayenne pepper
  • 1/2 tsp ground black pepper
  • 1/2 tsp paprika
  • 1/2 tsp cilantro
  • 1/4 cup brown sugar or Truvia substitute

Instructions

  1. Heat EVOO in skillet
  2. Trim fat and any cartilage from breast & trim to uniform size & pat dry.
  3. Mix spices and brown sugar in small bowl & blend thoroughly
  4. Roll each fillet in spice mix and lay in hot skillet
  5. Sear just a few minutes then simmer on low approx 15 mins til cooked thoroughly.
  6. Let set til juices absorb and serve.
  7. The sauce drippings make a nice "gravy" for potatoes.
